Fast Ed's Lower Sugar Chocolate Walnut Brownies

Ingredients

  • 250g unsalted butter
  • 110g dark chocolate
  • 150g brown sugar
  • 2 eggs
  • 1 tsp natural vanilla extract
  • 1 cup plain flour
  • 1/4 cup dark cocoa powder
  • 120g walnuts
  • 100g white chocolate chips

Method:

  1. Preheat oven to 170C
  2. Melt the butter and chocolate gently, then beat in the brown sugar, eggs and vanilla.
  3. Sift in the flour and cocoa, then beat until smooth.
  4. Mix in the walnuts and choc chips, then spoon in to a lined 27cm x 17cm slice pan.
  5. Bake for 25 minutes, until just set, then cool in the pan.

Coconut Rough Bliss Balls

2 cups Coconut Magic desiccated coconut

2 cups of walnuts

Pinch pink salt

8 Medjool dates, seeds removed

cup cacao powder

2 tbs Coconut Magic coconut oil, melted

2 tbs cacao butter, melted

Pinch vanilla essence

2 tsp Coconut Magic coconut sugar

Blend 1 cups of Coconut Magic desiccated coconut, walnuts and salt in the food processor until finely ground.

Add the dates and process until the mixture becomes sticky.

Add all other ingredients (except the remainder of the desiccated coconut) and process until well combined. Roll into balls of bliss!

Coat the balls with the remainder of the desiccated coconut. Refrigerate for one hour and serve.

Makes 8 – 10 balls + prep: 20 min. setting: 1 hr.

Protein Pancakes

Ingredients:

2 eggs

1 banana (mashed)

Dash of cinnamon

Coconut oil for cooking

Mix eggs with mashed banana and cinnamon

Heat coconut oil in pan over medium to high heat

Pour mixture into pan

Flip after approx. 4–5 mins or until bottom side is cooked

Cook on the other side and serve

Top with berry coulis:

Add some frozen berries to a pan over medium heat

Cook for approx. 5–10min or until the juices have thickened

OR add fresh strawberries and yogurt

OR grilled banana in coconut oil and cinnamon

Add 1 tsp coconut oil, sliced bananas and cinnamon to a pan over medium to high heat

Cook on each side until browned

Avocado and Carob Tart

Serves 8-10

2/3 cup raw almonds

8 medjool dates, pitted

Finley grated zest and juice of mandarin

Filling

2 avocados

3 tbls carob powder

3 tbls coconut sugar

1 1/2 tbls coconut oil

3-4 drops vanilla extract

1 tsp maca powder

To serve

250g fresh berries, such as raspberries, blueberries and strawberries

Line a 25cm spring form cake tin with cling wrap. To make the base, grind the almonds and dates together in a food processor until well combined, almost to a paste. Add mandarin zest and juice and process until it forms a soft dough. Place mixture into lined tin and press to cover base.

To make the filling place all filling ingredients in a food processor and blend until silky smooth. Spoon on top of the base and smooth out.

Flourless Banana and Lime Cake

Serves 16

4 ripe bananas

cup coconut water

3 eggs

1/2 cup organic maple syrup

3 cups almond meal

1 tsp baking powder

Finely grated zest of 1 lime

Preheat oven to 160C. Line a 25cm round cake tin with baking paper.

Place bananas and coconut water in a food processor and puree.

Using an electric mixer, beat eggs and maple syrup until mixture becomes thick and white. Fold in almond meal, baking powder and pureed bananas, then add lime zest and fold mix gently to combine.

Pour into prepared cake tin and bake for 20-30 minutes until the top springs back when touched. If the cake starts to brown at any point, cover with foil for remainder of cooking time. Cool in the tin for 5 minutes then remove from the tin and transfer to a wire rack...

Golden Door Savoury Quinoa and Warrigal Tart

It’s interesting to incorporate some Australian bush tucker into our diet and using warringal greens is a way to do this. If you can’t find it you can use kale.

Serves 8-10

Ingredients

2 cups finely chopped leeks

1 cup finely chopped mushrooms

1 cup chopped roasted capsicum (optional) (see recipe page XX)

1 cup chopped warrigal green or kale

100 g cherry tomatoes, quartered

1 cup fresh herbs of your choice (eg parsley, basil, thyme), finely chopped

4 spring onions, white and green part, finely chopped

4 cloves roasted garlic (see recipe page XX)

1/2 cup pitted Kalamata olives, roughly chopped

1/2 cup crumbled goat’s cheese feta

2 tablespoons finely grated parmesan cheese (reserve 1 tablespoon for sprinkling on top before baking)

Golden Door Chicken and Vegetable Moussaka Bake

Here is a classic dish with a Golden Door Twist. Traditionally made with beef mince, our super-nourishing version uses chicken or turkey mince.

Serves 6


Ingredients

2 brown onions, finely sliced

250 g lean chicken mince or french lentils (for a vegetarian option)

100 g mushrooms, finely chopped

11/2 teaspoons smoked paprika

250ml passata

300 g mixed cabbage (eg red, sugarloaf, wombok), shredded

1 eggplant, sliced into 5mm rounds

1/2 cup fresh basil, chopped 2 sweet potatoes, sliced

150 g kale or silverbeet, shredded

2 carrots, sliced thinly on the diagonal

2 roasted capsicums

2 tablespoons reduced fat feta cheese, crumbled (optional)

Super Green Smoothie

I give 110% into everything I do, whether it’s work, cooking, health, fitness, friends and family. I love to make the most of each and every day because we only get one chance!
